Ingredients
Pie crust:
10 inch Graham Ready Crust
Butter - optional
Pastry Cream:
3 Large eggs
1/2 cup- Granulated Sugar
1 cup - Whole Milk
1 cup - Heavy Whipping Cream
3 tbsp - Cornstarch
2 tbsp - Unsalted butter
2 tsp - Vanilla extract
Fruit:
Strawberries
Blueberries
Kiwi
Blackberries
Note: Taste as you go and feel free to add, lessen, or substitute ingredients according to your preference.
Directions
Step 1
In medium bowl, add eggs, sugar, and cornstarch. Mix together until well combined (use whisk, fork, or electric mixer).
Step 2
In medium saucepan, add milk, heavy whipping cream, butter, and vanilla extract. Cook over medium heat and bring to a boil.
Step 3
Pour pastry cream slowly into the milk mixture while stirring continuously. Then, turn stove off and continue to pour the cream mixture. Stir until it becomes a thick consistency.
Step 4
Transfer mixture from the stove to a medium bowl and place inside refrigerator. Chill for 2 hours or more.
Step 5
Melt two tablespoons of butter and pour into pie crust. Spread evenly and place inside oven for 10 minutes on 350 degrees.
Step 6
Pour pastry cream into pie crust and add your choice of fruit on top.
Step 7
Store in refrigerator.
